Day 1: Anne Frank House at opening (book tickets two months ahead — they sell out), Jordaan walking, Rijksmuseum afternoon. Day 2 canal day: rent bikes, ride the Canal Ring, Van Gogh Museum afternoon, dinner in De Pijp. Day 3 day trip option: Zaanse Schans windmills (half day) or Haarlem (half day), evening farewell dinner on a canal. Skip Amsterdam North and the Red Light District organized tours — they're tourist traps.
